First, you must have an army already. 80+ men will be enough. As you may already know, bandits can surrender if the odds are heavily against them. If they do, you are able to recruit every bandit in their party. However, bandits are fast and will flee when they spot your larger army. Chasing them is long, boring and not very efficient.
To cheese it, go with a group of your Horse Archers to within range and do enough damage to force them to attack. Try to kill high-value units or the commander. You can sometimes lure out Cavalry units or attack their HA/Cavalry directly, without forcing an immediate countercharge by infantry.
Start Your Own Kingdom. This new quest will bring you to the last step of kingdom formation. Here you need to complete the following actions: Reach clan Tier 3. Gather 100 troops. Be an independent clan. Own a settlement. Once all four requirements have been fulfilled, a new kingdom tab will appear in your game menu.
Create an army and invite only them. That's a no-cost, free, Army you can use to train up Leadership for a few levels. Other than that, they don't serve any intelligent purpose right now other than allowing you to effectively have more units by always being with you in an Army that doesn't cost you any influence.
